What can I do to get my cat to stop clawing and scratching ME!?

The spray bottle isn't going to help the cat, dear. Keep him by himself for a while. Do not give him treats until he acts like a proper cat. Kittens tend to be wild, but not this wild! Maybe something is seriously wrong with your cat. I know some diseases can make your cat more aggressive as the disease wears on. Basically see your vet, and make sure you are giving him lots of attention, too!
